(Music of the Medieval Pilgrim) by the Ensembles Oni Wytars and Unicorn. Naxos records 1994. A musical "journey" from England to the Holy Land (as it was refered to) via France, germany, Hungary, Croatia, what was the Byzantine Empire into the "Lands of the Moor" returning via Italy and Spain.

An excellent CD, and yes we do stock it!
I also love The Black Madonna - music written by the monks of Monserrat, because those dreadful pilgrims would insist on breaking into song and dance once they'd been into church and made their penance, so the music is all to the virgin Mary, but secular in style, ranging from dances, reflective songs to what could be the forerunner of flamenco. Fabulous!
