Bresaola bits and recipes for those bits ?

I have just finished a batch of Bresaola,sliced it and bagged but i have about a kilo of off cuts,any idea what i could make with it ? want to try cooking but i cant find any recipes for cooking with Bresaola at all :?

Why would you want to cook it - just olive oil and lemon and your off.
