17th Century Cold smoked foods?

Just bought myself a ProQ Cold Smoke Generator since fancy having a go at cold smoking since cant have a hot smoker in the communal gardens but was wandering would they have hard smoked cheese in 1642 since would like to do some authentic cold smoked things for my living history village which is based around 1642 but not sure what smoked foods they would have in that time period??
