Salsify

Watched Sat Kitchen this Sat just gone and the chap was using Salsify ( I think I have heard of it being used more inthe US than over here but I could be wrong) any ideas what time peirod this would suit as I'd like to try it in a dish and it looks exoctic enough to be display ite,...

I don't know if it's suitable for medieval or not, but have a funny feeling it is. Obv. a funny feeling isn't enough to go on, but...
Anyhoo, I grew some last year and while it is certainly interesting and OK, can't say that i was overly impressed by the veg. The fresh root exudes a milky sap that didn't say 'good food'. The taste is a bit like Jerusalem Artichoke. The plant itself is very pretty, specially the flowers. It has now self seeded, and i have it growing as a weed...

While they aren't specific, most of the sites I found say "after 1500" for it's introduction to the British Isles, with cultivation starting in the 1600s

thanks guys... i am not sure myself now after research..but also after Cats comments might find it hard to get anyone to actually eat it lol..I'm all for trying something new though so if I can find some I might give it a go

Dorothy Hartley says to peel it, parboil then egg and crumb it and fry it, and serve it as fried vegetable oyster. Personally I couldn't be bottied, and made it into soup...it is a slightly translucent grey colour...I didn't taste any oysteryness, but some people reckon it has an oyster sorta taste. Good luck! (I'll be there with me bowl to taste some of yours, don't worry!)

I had some in my veg box this week. Very similar to Jerusalem Artichoke I thought. Nice - but a bit 'meh', I probably wouldn't buy it again. Incidentally what did they do with it on Saturday Kitchen - just in case I get more this week.

Gaby, one could get it in regular seed company packs last year (Suttons IIRC), failing that hold fire and I'll see if any comes up wild this year and save the seeds for you.
