I'm looking at getting a collar made for my lurcher so I can bring him to events with me, I would have just made semi slip lead type thing out of some rope but he has had a skin condition in the past and anything that rubs really upsets his skin. So the collar needs to be soft and quite wide otherwise he can go Houdini on my ass and escape
So I've seen a few collars in illustrations and I can see how the leads attached but no so much how the collar is closed
I was think about just getting a martingale type made and using forged metalwork and authentic materials but I wanted to see how it was really done so to speak.

First of all, how can you talk of a lurcher and not give us a picture?
I haven't seen any depictions of collars for dogs or anything, however I'd think it'd be something simplistic. To me, I'd put the comfort of the dog first, instead of authenticity. Hell, I'd even walk the dog in a pink fluffy collar if that was what it felt comfortable in and didn't rub / irritate its skin. I'd suggest a leather collar, we have some greyhounds at the kennels that have leather collars and a buckle fastening, maybe something like that? On the other hand, what about a early styled sword belt fastening sort of thing?

You've probably found a good solution by now, but I was wondering the same thing about my spaniels so I started a Pinterest board of dogs in Medieval manuscripts and tapestries

They seem to range from the very ornate to the extremely simple. Haven't decided what to go for yet, or whether to take the hounds. Samuel The Spaniel is wary of men, especially men wearing hats or carrying things, so a reenactment may not be a happy place for him.
Oh, and here they are sunbathing in the garden. Sam is the chocolate one, and Maisie is the blue roan.
