I've always wanted to make cheese too. Although my favorite cheeses are probably more difficult to make like blue cheese and goat cheese and brie. Are the smelly or moldy cheeses made from a starting culture of mold?

How does one go about making their own mead? Is it similar to beer making or more akin to making whiskey? I realize the main ingredient is honey but is that all to make 'true' mead or does it require something else?

What was the process of making beef jerky back then? Did they hang the beef and let it dry on the ship? Or did they place the slices in salt to dry and cure it? I would think the jerky would either have no spices or whatever was common which could have been just pepper.
